鸡冠花叶蛋白质营养价值的评价研究

EVALUATION ON THE PROTEIN QUALITY OF CELOSIA CRISTATA L.LEAVES

  • 摘要: 应用模糊识别法和氨基酸比值系数法,分别以鸡蛋蛋白质为标准蛋白,以WHOFAO氨基酸参考模式为评价标准,对3种鸡冠花叶蛋白质营养价值进行了全面评价,并与10种常见叶菜蛋白进行对照比较。结果表明,3种鸡冠花叶(干品)蛋白质含量为23.7%~27.4%,蛋白质中氨基酸种类齐全,其含量为83.47%~86.94%,必需氨基酸(EAA)占总氨基酸量的40.2%~41.7%,第一限制性氨基酸为含硫氨基酸(Met+Cys)。其叶蛋白营养价值优于10种叶菜。结合作者曾报告的其他营养成分进行分析评价,认为鸡冠花叶是一种值得开发利用的优质蔬菜。

     

    Abstract: Using the egg protein as standard protein and WHO/FAO reference model of essential amino acid (EAA) as an appraisal criterion,and putting 10 kinds of vegetal as a series of contrast,the authors evaluated the nutritional value of protein in Celosia cristata L.leaves by the method of fuzzy discernment and the method of ratio coefficient of amino acid (AA) respectively.The results showed that the protein contents of C.cristata L.leaves ranged from23.7%~2.7.4% in the dried samples.The gross protein in 3 varieties of C.cristata L.leaves were rich in all kinds of AA,containing 83.47%~86.94% AA.EAA took up 40.2%~41.7% of total AA.The first limiting AA was sulfur containing AA,Met and Cys.The protein quality of C.cristata L.leaves was far superior to that of some common vegetables.Based on other nutrient components described by some papers,this species may be considered as a fine vegetal which can be exploited and used.
